HIP PRESSURE COOKING

Laura Pazzaglia, an American ex-pat living in Italy is doing a gorgeously illustrated blog on pressure cooking. That’s her photo on the left.

Laura’s recipes are imaginative and live up to the name of her blog. Her mission is to get more people in the kitchen pressure cooking away–a mission I share to be sure.

Laura has recently started a series on pressure cooker basics. She started with mashed potatoes and moved on to steaming vegetables, with “chapters” on stocks and beans coming up.

Tasting is believing: potatoes cooked in the “pc” have a more silken texture than when they are boiled in the traditional way. As if that weren’t bonus enough, they’re done in 30% less time. Check it out!
